It's a batch premix that's packed with the flavours associated with holiday season, rendering it ideal for hosting a celebration. Reserve the remaining citrus syrup to use in morning drinks, puddings, or to make another batch of the drink.
The Bikini Cocktail
Yields 10 guests
For the Clementine Syrup (yields 750ml)
300ml fresh clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
To prepare the Cordial: Combine all the items into a saucepan, bring to a simmer, stirring to dissolve. Then, remove from the burner and leave to reach room temperature entirely. Decant into an clean bottle, close it and store in the refrigerator, it will last for about one month.
To make Premix: Combine the specified spirits and syrup in a large bottle, allow it to infuse for 60 minutes, then pass it through preferably using muslin, so it's perfectly clear.
When ready to serve: Pour 85ml from the cocktail base into a stirring glass packed with ice, gently stirring lightly for a minute to chill. Filter into an frosted cocktail glass or similar, decorate with a few cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
